Jim Shirley is a Pensacola, Fla. native. In addition to being a chef and restaurateur, he is a writer, credited with a cookbook, Good Grits! Southern Boy Cooks, and a column by the same name in the Pensacola News Journal.

He co-owns The Fish House and Atlas Oyster House in Pensacola, as well as Great Southern Café and The Meltdown on Highway 30A at Seaside, Florida. At the southern foot of the U.S. Highway 331 bridge over Choctawhatchee Bay is his most recent South Walton sensation: The Bay. Shirley described The Bay’s food as having Southern coastal flavors with international influences.
