GAPP enlists James Beard award-winning chef to create pollock-based “quarantine cuisine”

Genuine Alaska Pollock Producers (GAPP), the Alaska pollock promotional and trade group, has teamed up with James Beard-award winning chef Thierry Rautureau to provide consumers who are staying home due to the coronavirus crisis with new recipes in an attempt to supplement their “quarantine cuisine.”

Rautureau, who owns two popular French restaurants in Seattle, plans to create seven original recipes using pollock, which will allow consumers to use familiar pantry staples to serve up a fish with which they might not be familiar when it comes to home cooking.

Rautureau’s previously worked with GAPP by including both of his restaurants, Luc and Loulay, in Seattle’s first Wild Alaska Pollock week, which began in February and ran into last month. 

“I love wild Alaska pollock because of its versatility and I can’t wait to bring that out and show people just how many things you can do with this fish – from classic French tartines, to baked fillets to pasta and more,” Rautureau said. “I also love wild Alaska pollock’s sustainability story – that’s so important to me as a chef and to many consumers as well. I can’t wait to have more people learn about this fish and try it out.” 

The coronavirus crisis has drastically altered how U.S. consumers purchase seafood, with many restaurants closed or shifting to take-out only, while seafood sales in grocery stores has skyrocketed. GAPP CEO Craig Morris said the campaign is intended to help consumers that may be looking to cook something new at home.

“We’re all starting to go a little stir-crazy and get bored with the same old combination of items from our freezer and pantries,” Morris said in a press release. “We wanted to work with chef Thierry to help people pass the time sheltering in place learning how to take their culinary skills up a notch with a classically trained chef and get them excited to keep cooking at home, with wild Alaska pollock.”

The recipes will be available on the GAPP website and Rautureau will be doing a live cooking demonstration of the recipes on social media, according to Morris.

“GAPP wants to do its part right now to help our fellow citizens doing their part to stay – and cook – at home. We’re lucky to have a chef as renowned as chef Rautureau to help kick #quarantinecuisine up a notch or two!” Morris said.
