Verlasso launches downloadable sustainable farmed salmon cookbook

Progressive farmed salmon producer Verlasso has released “Sea Change,” a downloadable sustainable seafood cookbook written by accomplished chefs John Ash and Jennifer Bushman.

Featuring recipes using Verlasso’s “harmoniously raised” farmed salmon, the 85-page book is available online for free in pdf form and as an interactive e-book that works with programs like iBooks.

“It is incumbent on us all to know that what we eat has been produced in the most sustainable manner possible including how it’s packaged, transported and importantly, if it’s produced in a way that provides health to us and to the environment and also will be here to sustain future generations,” wrote Ash in the book’s introduction letter.

“I love seafood. I have since I was a little kid,” Scott Nichols, director of Verlasso, told SeafoodSource. “I’m so happy that Jennifer and John could bring these delicious and approachable recipes to people who want to fix themselves the most delicious food on the planet.”
