The recently opened Kinship, which aims for a delicate balance between upscale cuisine and down-home comfort food, offers D.C. diners appetizers and entrees in four different categories: craft, history, ingredients and indulgence. Firmly entrenched in the last category is the Caspian Sea ossetra caviar served with Yukon gold potato chips and crème fraiche. The dish is served simply in three egg-shaped bowls and costs USD 80 (EUR 75).
