Fairmont's sustainable seafood pledge

 Fairmont Hotels & Resorts on Thursday announced that it's raising awareness and funding for sustainable seafood.

Chefs at all Fairmont locations will serve their favorite sustainable seafood entrées in April, and guests will be invited to donate USD 1 to the National Geographic Society in support of ocean conservation and marine resource restoration.

"While Fairmont kitchens are already actively involved in choosing seafood wisely and taking a leadership role in their communities, participating in this program will give us the opportunity to cultivate our global positioning and substantially contribute to the protection of marine life," said Mariano Stellner, Fairmont's corporate director of food and beverage.

In 2008, Fairmont removed threatened seafood species, including Chilean sea bass and bluefin tuna, from the menu. The luxury hotel chain is also a sponsor of National Geographic Mission Programs and a member of the World Wildlife Fund's Climate Savers program.
