Whole Foods showcases Alaska buyer

Whole Foods on Thursday announced that it posted on its Web site a video of its Alaska-based buyer, Keith Harris, hand-selecting fish for the natural-foods chain.

Harris lives and works in Alaska, buying king, sockeye and coho salmon for Whole Foods, which operates more than 275 stores in the United States, Canada and the United Kingdom.

His presence at the source allows him to selectively purchase from fishermen and processors using best practices, such as intentionally short fishing trips that result in limited catches of peak-quality salmon, according to Whole Foods.

“I am in constant pursuit of quality fish, choosing only-bright skinned salmon with a firm texture, avoiding the bruising that typically occurs from rough handling,” said Harris. “I focus on salmon runs with the reddest, most vibrant meat color available.”
