1. Fish and chips: A very modern take-out. In his commentary published on 5 September, SeafoodSource Contributing Editor Jason Holland looked at how fish and chips remain the most popular food in the U.K. despite recent trends that lean toward gourmet hamburgers and innovative condiments. Around 80 percent of the U.K. population continues to visit fish and chip shops at last once a year, while 22 percent visit every week. In addition, Brits spend around GBP 1.2 billion (USD 2 billion, EUR 1.5 billion) on fish and chips a year. Although the meal of fish and chips hasn’t changed much over the years, the industry has become more aware of issues surrounding sustainability, Holland wrote. In turn, providing customers with sourcing information could be key in ensuring the iconic meal’s staying power.
