It features a sauce made with fermented black beans with soy, ginger and garlic. The crab and sauce is cooked in a wok with sake and green onions. “We get this sticky glaze on the outside. The delicate flavor of the Dungeness crab pairs well with it,” said Sam Burkhart, executive chef at Etta’s.
