Etta’s version dresses up a bibb lettuce, avocado and Dungeness crab salad with a Nouc Chom dressing, a Vietnamese-style dressing. The other is a salad created by Jimmy Reyes, chef de cuisine for Spencer’s and David’s Club restaurants at the Hilton Orlando in Orlando, Fla. The crab is lightly tossed with basil, chives and lemon juice. A light sauce on the bottom of the plate features coconut, fermented garlic, vinegar and marin. “Dungeness crab is very sweet and absorbs the flavor very well,” Reyes said.
