The crudo feature on the menu currently is a plump, moist scallop and truffle crudo. For this dish, Chef McKinney is currently sourcing scallops from the Northeast U.S. coast, which he accents with neighboring Georgia’s olive oil, local fennel fronds, tarragon leaves, red radish, and Maldon sea salt. The finishing touch is fresh summer black truffles from Italy.
The dish is best paired with a Viorin Jumel Tradition Brut Champagne – and as McKinney so ably provides – a dash of Southern hospitality.
