Many restaurant guests are not familiar with this invasive species, so Miya’s Sushi in New Haven, Conn., educates guests about the problem with carp in local waters and about its delicious flavor. “In the last configuration of our menu, we didn’t have tuna; we had lionfish and carp in its place,” said executive chef Bun Lai. “Once the carp break into the Great Lakes, they could potentially destroy a multi-billion dollar fishery there.”
