Rubio’s Restaurants — which helped popularize the fish taco in the United States when it opened its first restaurant in San Diego in 1983 — has added two new fish tacos to its menu.
On Friday, the 200-restaurant chain rolled out the Avocado Corn Fish Taco and the Sesame Soy Fish Taco. Both are made with Alaska pollock that’s hand-dipped in seasoned beer batter.
The Avocado Corn Fish Taco features fire-roasted corn, peppers, onions and Hass avocados served in a stone-ground corn tortilla and finished with Rubio’s signature white sauce. The Asian-influenced Sesame Soy Fish Taco is served in a warm flour tortilla and combines sliced Hass avocados and spring mix lightly drizzled with a sesame soy sauce.
Rubio’s is also promoting the sustainability of Alaska pollock. “We pride ourselves on not only creating never before seen seafood dishes, but also being a friend to the ocean,” said Rubio’s founder Ralph Rubio. “We make it a priority to do our part to keep the ocean healthy by serving nearly all sustainable seafood, like our Alaska pollock.”
Based in Carlsbad, Calif., Rubio’s restaurants are located in California, Arizona, Colorado, Utah and Nevada. The chain has sold more than 150 million fish tacos since its inception in 1983.
