Sushi popular at U.S. resorts

While Americans have been steadily eating more sushi over the last few years, the latest trend is hotels across the country opening sushi bars and restaurants.

Several large Orlando, Fla., hotels,  including JW Marriott and the Hyatt Regency Grand Cypress, have opened onsite sushi restaurants over the last year to appeal to both hotel guests and to the local community.

The most recent restaurant launch was from Rosen Centre hotel, a 1,334-room hotel next to the Orange County Convention Center, which opened the Banshoo sushi bar in early June.

The Rosen Centre brought in 20-year sushi expert Chef Tadayoshi Kohazame to design the menu, which offers 12 signature sushi rolls, six signature sashimi and seafood presentations and nine nigiri sushi and sashimi selections, along with chef specials. One of the chef’s specialty dishes is the citrus-infused Banshoo Ceviche Usuzukuri, made of thin slices of tuna, whitefish and salmon and served with a lime ponzu sauce. The Banshoo Sunset Signature roll is a blend of lobster, crab and scallops topped with tuna and salmon.

Meanwhile, tien,  an Asian restaurant that serves sushi and sashimi that  opened in the IP Casino Resort & Spa in Biloxi, Miss., a year ago, has become popular with both locals and resort guests.

“People eat a lot of sushi here, and there is a large population of Vietnamese,” said Chris Poplin, executive chef of the IP.

Instead of offering sushi selections that include deep-fried tempura and other more modern ingredients, the goal of tien’s sushi chef is to stick to traditional sushi, said Poplin. “We do the basics and the well-known things, and do them perfectly,” said Poplin. Much of the sushi fish that IP purchases is from the Japanese Food Co., which is dedicated to sourcing sustainable products and has outstanding quality, added Poplin.
