The number of Brits who have consumed fresh salmon increased from 5 million in 2008 to 6.1 million in 2010, according to new figures from market researcher Kantar Worldpanel.
The new figures also showed that 48 percent of grocery shoppers purchased fresh salmon at least once in 2009 and that fresh salmon now represents more than EUR 1 of every EUR 5 spent on fish in the United Kingdom.
The release of the data coincides with the publication of the Scottish Salmon Producers’ Organisation (SSPO) annual report, which highlights the industry’s contribution to the social, economic and environmental sustainability of Scotland. The SSPO called the UK its most important market, and projected that demand could warrant supply twice as much as is currently being produced.
“Although salmon is most likely to be consumed for its health credentials, it is now making more of a splash as a favorite meal ingredient,” said Mark Thomson, Kantar Worldpanel strategic insight director. “The growth in new consumers is across both adults and children, which links into recent recessionary trends as more people eat together, rather than at separate eating occasions.”
