Coln Valley, Saucy Fish go ‘light’ with salmon

Firmly targeting the summer market, two recent salmon product roll outs have lighter eating in their sight.

Initially produced in 2010 for the British tennis tournament Wimbledon, UK traditional smokehouse Coln Valley has launched its Pimms gravadlax salmon product to a wider market.

“Coln Valley has created a signature summer flavor that pushes the boundaries of conventional salmon products,” said Mark Osborne, Coln Valley's managing director.

The smokehouse sources fresh salmon for its formulations from two to three farms on Scotland’s west coast. A twist on the traditional Scandinavian gravadlax dish, the salmon is cured for three days in a marinade of Pimms, fresh orange juice and mint.

“The Pimms gravadlax blends contemporary summer flavors with traditional production techniques and will be a hit throughout summer 2011 and beyond,” said Osborne.

The product, which has a “sweet and salty contrast,” is available in 100-gram and 200-gram packs, priced at GBP 4.49 and GBP 7.99, respectively.

Meanwhile, Seachill’s blossoming brand The Saucy Fish Co. has underlined the low-calorie products in its chilled-fish range.

With only 133 calories per serving, the brand’s salmon fillets with chili, lime and ginger are being pushed as a “light lunch” for the summer. A second product is a mustard and dill vinaigrette on smoked haddock that has up to 97 calories per sauce serving.

Both Saucy Fish products are on sale from GBP 4 at supermarket giant Tesco.
