Los Angeles, California, U.S.A.-based Fishwife Tinned Seafood Co. has launched its third core product: smoked salmon sourced from Atlantic salmon producer Kvarøy Arctic.
“Conservas are a staple in cultural foodways that we’re seeing an increased demand for in the U.S.,” Kvarøy Strategic Development Officer Jennifer Bushman said in a press release. “The recipe for this version of Kvarøy Arctic salmon with Fishwife captures the freshness and brininess of the Arctic circle with the perfect balance of smokiness ideal for the fall and winter seasons.”
The new smoked salmon is for sale through Fishwife's website for a suggested retail price of USD 12.99 (EUR 11.05) to US 13.99 (EUR 11.90) per 3.5-ounce can or USD 32.99 (EUR 28) per three-pack. It will also be sold at retailers in Los Angeles and San Francisco, California; New York City; Boston, Massachusetts; Seattle, Washington; Portland, Oregon; and other cities.
Fishwife Tinned Seafood was founded by former music marketing director Becca Millstein and television writer, podcaster, and comedian Caroline Goldfarb. The company “celebrates the sexiness of tinned seafood, while supporting sustainable aquaculture, small-boat fisherfolks, and micro-canneries along the way,” Kvarøy said.
“We chose to work with Kvarøy Arctic on this project because we believe in supporting the most future-facing partners in the aquaculture space. From their pioneering work using fermented microalgae as a sustainable source of omega-3s to their laser technologies that eliminate the use of insecticides, Kvarøy provides a fantastic example of what salmon-rearing looks like when done right,” Millstein said.
Millstein and Goldfarb said they encountered European conservas while living and traveling in Spain and Portugal, Kvarøy said, but became frustrated at the lack of conservas options available in the U.S.
“They started Fishwife with the goal of both bringing the allure of conservas culture abroad to the American table and building new ethical supply chains for the next generation of tinned seafood,” Kvarøy said.
Fishwife’s Atlantic salmon is brined in extra-virgin olive oil, natural sea salt, organic garlic salt, and organic brown sugar. It is smoked in small batches over a mix of beech, maple, and birch wood, and then hand-packed and canned by family-run cannery on the central coast of Washington.
Fishwife also offers smoked albacore tuna, hook-and-line caught off the Pacific Coast; smoked rainbow trout raised in the U.S. state of Idaho; and a summertime batch of Galician sardines in extra virgin olive oil with preserved lemon.
