We are trying to get away from the fried foods stigma we have in the South, so we are doing a healthier version,” said Jon Gibson, executive chef of Bill’s by the Beach in Gulf Shores, Alabama. Chefs poach wild shrimp in-house, pair it with garlic chili sauce, sprinkle toasted coconut over the dish and then serve everything over grilled pineapple. “It is one of our best-selling dishes,” Gibson said.
