2. Royal red shrimp ceviche. Ryan Vargas , chef de cuisine at Emeril's Tchoup Chop in Orlando, developed a ceviche with the Florida’s premium, sweet shrimp that would represent the restaurant and the state in “creativity and flavors,” according to a spokesperson. In addition to shrimp, the ceviche includes pineapple, mango, lychee nuts, cilantro, green onions, jalapeno, red onions, cucumber, tomato and lime juice.
