US company brings new farmed oyster line to market

Washington, U.S.A.-based seafood company Jamestown Seafood is introducing a new line of oysters from the Pacific Northwest in collaboration with the Jamestown S’Klallam tribe.

The company will be expanding its product portfolio to include the following oyster products, each farmed using specialized oyster aquaculture techniques:

  • Sequim Bay Jades - Beach Farmed: Grown directly on the sandy floor of Sequim Bay, these oysters display mineral notes coupled with brine, subtle sweetness and a fresh cucumber finish.
  • Sequim Bay Blue Opals - Tumble Farmed: Allowed to tumble with the tides, these oysters have a distinctive, bowl-shaped shell. They are plump and juicy and display a clean ocean flavor accompanied by subtle sweetness and buttery texture. On the finish, there are hints of melon.

Jamestown Seafood begins its production at its hatchery Quilcene Bay. From there, oysters are transported to the company’s farm in Sequim Bay, which lies along the Strait of Juan de Fuca right before the entrance to the Puget Sound in Washington State.

“As with the oysters, Sequim Bay is unique. Its proximity to the Pacific Ocean, and nutrient rich tides that replenish the bay, allows oysters to thrive on a regular supply of fresh, clean food – promoting faster growth. Additionally, the lack of urban run-off creates an environment perfect for sustainable, clean and delicious seafood,” explained the company.
