Tucked away in a nondescript location on Oahu’s North Shore, the low-key Kahaku Superette serves its house-made food from a deli-style counter, sold by the pound. While it won’t blow you away with its décor, it might with its poke. Owner Tina Lee incorporates aspects of her Korean heritage into her own spin on the classic poke.
Lee starts with a base of ahi tuna, onions, sesame oil sesame seeds and chili peppers, then mixes it with her secret sauce. The exact recipe isn’t shared publicly, but it does involved soy sauce fermented with fresh ginger for up to eight years, according to employee Emee Viloria.
