Bonefish Grill, which operates 130 upscale casual seafood restaurants in 31 states, is featuring Arctic char and wolffish on its menu through the remainder of June.
Guests can pair the Arctic char, flown in fresh from Iceland, with a variety of toppings, including zesty mango salsa, chimichurri sauce, lemon butter and Pan-Asian teriyaki glaze with wasabi cream. The fish is a perfect candidate for Bonefish's signature wood-fired grilling technique, says Anthony Seta, master chef and Bonefish Grill VP of product development and innovation.
"Not many people know this wonderful fish," he notes. "It's an ecologically good choice, and also a healthful choice, rich in the omega-3 fatty acids proven so beneficial to heart health."

Also periodically over the next few months, Bonefish is showcasing North Atlantic wolffish, served with a shrimp and crab almandine topping.
Bonefish was the sixth fastest growing restaurant chain last year, according to Chicago foodservice consultant Technomic. The Tampa, Fla., chain's sales increased 24 percent in 2007 to $406 million.
